Marion's banana cake GF- LF
2 bananas (if small 3)
3 free range / organic eggs
60 g ( 2 tablespoons) raw honey
1/4 tsp baking soda
1 tsp lemon juice
120 g almond powder or Red Mill almond meal
Preheat your oven to 180˚ C.
Mash the bananas with a fork. Mix with the beaten eggs, honey, almond powder, add the baking soda and lemon (the lemon activates the baking soda).
Lightly oil one loaf tin and then coat liberally with extra almond meal or desiccated coconut – this will prevent the cake from sticking.
Spoon batter into the tin and bake for 25 minutes in a steamer or for 30 min in an oven at 180ºC
