* kombu is an edible kelp (brown algae seaweed) from the laminariaceae family often found in the Japanese cooking. The algae has the capacity to reduce legume cooking time (chick peas, dry beans, lentils,...) and make them more digestible. The dried algae can be purchased in asian shops or organic stores.
